1/4 cup maple syrup
1/2 cup shredded coconut
1 cup ground almonds (almond flour)
2 tbsp butter, melted or grapeseed oil
1/4 tsp cardamom (or any spice of choice). Spice may also be omitted.
(Recipe may easily be doubled)
Combine dry ingredients. Stir in maple syrup and butter. Place small balls onto a cookie sheet. Bake at 350F for about 10 minutes or until lightly brown. Cool completely before removing from cookie sheet.
